Chicken Tika Masala ala Stuart

    Education is all about being prepared for life. Even before my wife sadly passed away last year, I used to do a lot of cooking. Here’s the first of several easy recipes I will share with you as we all lead busy lives (teachers especially), so easy but tasty meals come in handy.

    Today I used a “handful” (about 200g) of raw, chopped-up chicken (enough for 2 meals or 2 people) but you can also use leftover roast chicken and make it a meal for the whole family. If you don’t have all these spices, you can replace the items with an * with curry powder.

    Marinate this in:

    • 1 tbsp lemon juice
    • half tsp chilli powder (optional)*
    • 1 tsp garam masala*
    • 1 tsp cumin powder*
    • 1 tsp turmeric powder*
    • half tsp salt
    • 2 tsp oil
    • 1 tsp ginger*
    • 2 diced tomatoes (I used 2 heaped tbsp of diced from the can).

    Mix and coat the chicken and cover.

    Next heat your pot, add enough oil to fry up a diced onion and 3 cloves garlic (I ran out so I used a tsp garlic salt) and 1 tsp fenugreek (optional). Fry until golden.

    Add:

    • 1 tsp paprika powder
    • 1 tsp coriander powder (optional)
    • half tsp cumin powder (optional)

    Fry for another minute or so. Add the marinated chicken stir in and fry for another 2 minutes. Add 1 finely grated carrot (I ran out so I added a handful of mixed veggies) and half a cup of coconut cream.

    I also rinsed out the tins (put the rest of the coconut cream and tomatoes into containers and freeze for another day) with about half a cup of water and added that to the veggies which also made the meal go further. Stir in, turn down and simmer for an hour or so until it’s “right”. I just do it all in my pressure/slow cooker 4 hours.

    Serve with boiled rice (add a tsp of oil and a tsp salt and it will stay fluffy). A rice cooker (costs about $20) makes it easy but if you don’t have one use a pot and measure the ratio of 1 cup of rice (3 cups can feed 4 people easily) to 2 cups of water and simmer, once boiling, for 15-20 minutes.

    If it is too watery at the end, add a little cornflour to thicken the sauce.
